Mixer Bar. The mixing element of horizontal dough mixers (q.v.) that is mounted across the bowl width on pairs of opposite mixer arms (q.v.) formed by cradles attached to the agitator shaft. The bars, which may number two, three, or four, may be straight and smooth or possess various configurations, as sigma or curved, be in parallel alignment with each other or at opposing angles, and be equidistant from the shaft or at varying distances.
