Mixer Bowl. A container of variable capacity and design, normally fabricated from stainless steel, in which doughs (q.v.), batters (q.v.), and other mixes are prepared. For horizontal mixers, the bowl has a trough-like shape, with curved bottom and flat ends and sides. Depending on its size, it may be provided with a refrigerating jacket for temperature control. For vertical mixers, it is circular in shape, with a round bottom, and is provided with exterior handles and lugs.
