Mixing Tolerance Index (MTI)

Mixing Tolerance Index (MTI). One of several indices derived from a farinogram (q.v.) obtained while measuring the mixing requirements of flour (q.v.). The MTI represents the difference, expressed in Farinograph Units (FU), in the height of the mixing curve top at its peak and 5 minutes following the peak with continued mixing. The more the difference exceeds the value of 20 FU, the more deficient is the mixing tolerance (q.v.) of the flour.
