Near-Infrared Reflectance (NIR) Analyzer. A recently developed spectroscopic instrument of variable design that exposes the surface of a food sample, as flour (q.v.), to radiation in a narrow band of wavelengths in the near-infrared region of the electromagnetic spectrum and utilizes the reflectance or absorbance to measure the moisture, protein (q.v.), ash (q.v.), and starch (q.v.) contents of the sample.
