Oleic Acid

Oleic Acid. An 18-carbon mono-unsaturated fatty acid (q.v.) that contains one double bond (q.v.) at the center of its carbon chain. It is found in nearly all fats (q.v.) and oils (q.v.) and forms a major constituent of butterfat (q.v.), lard (q.v.), and tallow (q.v.).
