Oven Steam

Oven Steam. Low pressure steam that is introduced into the baking chamber (q.v.) from an outside source to supplement the humidity created by moisture evaporation from the baking products. Steam (q.v.) is normally applied at the start of the baking process to create conditions conducive to the baking of such products as hard rolls (q.v.) and hearth breads (q.v.).
