Ovomucin

Ovomucin. A complex protein (q.v.) that makes up some 11% of egg white (q.v.). It is composed of several fractions, is relatively heat resistant, and, in the egg contains some 20 to 22% of carbohydrates (q.v.). It exhibits an inhibiting effect on the proteolytic enzyme trypsin (q.v.).
