Peanut Flour

Peanut Flour. The product obtained by finely grinding peanuts (q.v.) from which the oil (q.v.) has been extracted. It is composed on an average of 60% protein (q.v.), 21.5% carbohydrates (q.v.), 6% lipids (q.v.), 2.5% fiber (q.v.), 4% ash (q.v.), and 6% moisture. Its protein is of high biological value and the product is rich in B-complex vitamins (q.v.).
