Peanut Oil

Peanut Oil. The oil (q.v.) extracted from peanuts (q.v.) by either an expeller or a solvent method. Its unsaturated fatty acid (q.v.) content is quite high, with oleic acid (q.v.) and linoleic acid (q.v.) comprising some 78% of the total. The oil finds extensive use in the production of hydrogenated shortenings (q.v.) and of margarine (q.v.).
