Phosphorylase

Phosphorylase. An enzyme (q.v.) widely distributed in animal and plant tissues, that catalyzes the conversion of glucose (q.v.) and glycogen (q.v.) into more complex carbohydrates (q.v.) in the presence of a phosphate salt. It plays a key role in starch (q.v.) synthesis and in yeast fermentation (q.v.).
