Phytase

Phytase. An enzyme (q.v.), present in cereal grains and other plant materials, that catalyzes the hydrolysis (q.v.) of phytate (q.v.) into inositol, a vitamin of the B-complex (q.v.), and orthophosphate, thereby counteracting phytate's interference with the body's absorption of iron, calcium, zinc, and other nutrients .
