Pie Crust

Pie Crust. A pastry-type dough (q.v.) made of a flour-shortening blend to which water is added to yield the desired flaky structure in the final pie crust which serves to contain various kinds of filling (q.v.). Four general types of pie crust are distinguished, namely, mealy, moderately flaky, flaky, and long-flaky, the individual types depending on the mixing procedures followed.
