"Pita Bread. Also called pocket bread, it is similar to balady bread (q.v.) in being a flat, circular, two-layered loaf that has its origin in the Middle East, and whose internal void, or ""pocket,"" is created by a rather sudden steam eruption within the loaf during baking in a hot oven at 700 to 930¦F (370 to 500¦C)."
