Polydextrose. A water-soluble polymer (q.v.) of dextrose (q.v.) that is only partially metabolized in the human body, yielding 1 calorie (q.v.) per gram (q.v.). It is used as a low-calorie bulking agent (q.v.) and as a humectant (q.v.), and is approved for use in specific bakery mixes and products.
