Polymorphism

Polymorphism. The capability of hard fats (q.v.) to change into several crystalline forms, each with its own melting point (q.v.), crystal structure, and solubility. High-melting point crystals are generally designated as ?-form, low-melting point crystals as ?-form, and intermediate-melting point crystals as beta-prime (?')-form.
