Polysorbate 60

Polysorbate 60. Another name for polyoxyethylene (20)-sorbitan monostearate which exhibits both hydrophilic (q.v.) and lipophilic (q.v.) properties and is an effective surfactant (q.v.) for aerating (q.v.) cake batters (q.v.) and icings (q.v.). It is also an effective crumb softener (q.v.) in bread (q.v.), particularly when combined with a monostearate (q.v.).
