Potassium Bromate Replacer (PBR). Any mixture of reactive substances, such as ascorbic acid (q.v.), azodicarbonamide (q.v.), and calcium iodate (q.v.), soybean flour (q.v.), enzyme-active soybean flour (q.v.), and others, that is designed to serve as an alternative for potassium bromate (q.v.) to counter concerns about the latter's possible carcinogenic character.
