Potassium Iodate. A fast-acting oxidizing agent (q.v.), KIO3, that exerts its dough conditioning (q.v.) action during the mixing stage. Except for its more rapid action, its function is similar to that of potassium bromate (q.v.). Its use is being superseded by azodicarbonamide (q.v.) which is also a fast-acting oxidizing agent (q.v.) and additionally reduces dough mixing requirements.
