Potato Flour. Dehydrated potato tubers reduced, by various methods, to a finely granular or powdery form, with the following general composition: moisture, 7.2%; ash (q.v.), 3.2%; protein (q.v.), 8%; lipids (q.v.), 1.4%; crude fiber (q.v.), 1.6%; and carbohydrates (q.v.), 78.7%.
