Pound Cake

Pound Cake. A rich cake (q.v.) whose original household recipe called for equal amounts, in pounds, of flour (q.v.), butter (q.v.), sugar (q.v.), and eggs (q.v.). To improve the product's volume (q.v.), grain (q.v.) and texture (q.v.), its commercial formula (q.v.) has been modified so as to reduce the proportions of eggs and butter or shortening (q.v.) and, correspondingly, increase those of sugar and flour.
