Pregelatinized Starch

Pregelatinized Starch. A starch (q.v.) in powder form obtained from various sources, as corn (q.v.), rice (q.v.), wheat (q.v.), potato (q.v.), etc., that has been subjected to gelatinization (q.v.) by heating in slurry (q.v.) form, then dried and pulverized. Such starch exhibits high water absorption (q.v.) properties and is susceptible to amylolysis (q.v.).
