Prepared Flour Mix

Prepared Flour Mix. A mix in which all dry ingredients, i.e., flour (q.v.), sugar (q.v.), dairy products (q.v.), egg solids (q.v.), shortening (q.v.) and, in some instances, yeast (q.v.), are blended together according to definite formulas (q.v.) directly in the manufacturer's plant, requiring only the addition of liquid in the bakery to produce a finished batter (q.v.) or dough (q.v.). Common categories of prepared mixes include chemically-leavened (q.v.) cake doughnut (q.v.) mixes, yeast-leavened (q.v.) bread (q.v.), roll (q.v.) and sweet-dough (q.v.) mixes, and chemically-leavened cake (q.v.) mixes.
