Propyl Gallate. A phenolic (q.v.) ester (q.v.) of gallic acid, (C6H2(OH)3CO2H), an astringent, white, crystalline compound widely distributed in nature, that is more soluble in water than in fats (q.v.) and oils (q.v.). Propyl gallate is a highly effective antioxidant (q.v.) for stabilizing lard (q.v.), but rather less so for cottonseed oil (q.v.) and soybean oil (q.v.).
