Propylene Glycol Monoester (PGME). Propylene glycol, CH3CHOH-CH2OH, that has been esterified (q.v.) with a fatty acid (q.v.) to form a surfactant (q.v.) with relatively high hydrophilic (q.v.) properties that renders it particularly suitable as an aeration (q.v.) agent for cake batters (q.v.) and whipped toppings (q.v.).
