Propylene Glycol Monostearate (PGMS)

Propylene Glycol Monostearate (PGMS). Propylene glycol (CH3CHOH-CH2OH) that has been esterified (q.v.) with stearic acid (q.v.) to form an effective surfactant (q.v.) for cake (q.v.) and bread (q.v.) products. It finds extensive use in cake and icing shortenings (q.v.) to increase their aerating (q.v.) capacity and to stabilize the crystalline (q.v.) structure of their solids.
