Protein-Lipid Interaction. A reaction between gluten proteins (q.v.) and flour lipids (q.v.) that takes place during dough mixing (q.v.) and leads to the formation of lipoproteins (q.v.) that are thought to contribute significantly to the gas-retaining capacity of the gluten (q.v.) in developed doughs (q.v.).
