Proteose

Proteose. Any of a group of intermediate, soluble derivatives from the partial degradation or digestion of proteins (q.v.) either by enzymes (q.v.) or such other agents as acids (q.v.), alkalis (q.v.), heat, etc. Unlike true proteins (q.v.), they are not coagulated (q.v.) by heat, but can be precipitated from solutions by salts (q.v.).
