Puff Paste Margarine. A margarine (q.v.) with a firm and waxy character derived from its high solid fat index (q.v.) which imparts to it a melting point (q.v.) of 130¦F (54.4¦C) compared to 103 ¦F (39.4¦) for regular baker's margarine (q.v.), and an extended range of plasticity (q.v.). This plasticity renders it suitable for rolling out into smooth, continuous sheets between dough (q.v.) layers in puff pastry (q.v.) and Danish pastry (q.v.) production.
