Pullulunase. An amylolytic enzyme (q.v.) capable of hydrolyzing (q.v.) the ?-1,6 bonds that form the branching points in the amylopectin (q.v.) fraction of starch (q.v.) and thus acts as a debranching enzyme, i.e., it removes the side chains and converts amylopectin into a short-chained linear starch fraction.
