Rabinovich Mixer. A continuous dough mixer (q.v.), developed in Russia, that features a horizontal mixing chamber housing a rotating shaft provided with mixing blades arranged in a screw-spiral pattern. Mixer shaft speed at 48 rpm develops the dough (q.v.) in 2 to 3 minutes, followed by 4 to 4.5 hours of progressive fermentation (q.v.) in a three-section dough trough (q.v.).
