Rack. (a) A mobile framework provided with tiered shelves that accommodate products for such purposes as final proofing (q.v.), baking, cooling, storing, and product movement. The unit often forms an integral part of larger bakery equipment, such as final proofers (q.v.), ovens (q.v.) and coolers (q.v.). (b) The act of placing a bakery product on a rack.
