Raisin. Any of various sun-dried or artificially-dried sweet grapes, either left with their natural dark color or bleached. The dried fruit, with a moisture content (q.v.) of 14 to 17%, consists of 65 to 72% sugar (q.v.), 2.5 to 2.8% protein (q.v.), 1.6 to 2.5% ash (q.v.), and l.5 to 1.8% acid (q.v.). Its flavor bears little resemblance to that of the original grape.
