Retarded Dough

Retarded Dough. Any yeast-fermented sweet dough (q.v.), either made up into final finished pieces or in bulk portions of 10 to 15 pounds, that is cooled sufficiently in a refrigerator (q.v.) to greatly retard further yeast (q.v.) action until such time as the dough is needed to meet product needs.
