Rotary Dough Divider

Rotary Dough Divider. A divider (q.v.) that differs in design and operation from conventional units by forcing previously degassed bulk dough (q.v.) through an extrusion (q.v.) nozzle at whose exit port a rapidly rotating knife cuts off individual pieces of predetermined weight. In another version, dough is forced into measuring cylinders within a continuously rotating housing, with each cylinder being fitted with a shuttle piston that acts as a volumetric control and ejects the dough piece from the cylinder at given positions in the rotation cycle of the housing.
