Saponification Number. The number of milligrams (q.v.) of potassium hydroxide (q.v.) required to completely convert one gram (q.v.) of fat (q.v.) into soap and glycerol (q.v.). The majority of domestic vegetable oils (q.v.) have a saponification value within the range of 180 to 205.
