Saponification

Saponification. The decomposition or hydrolysis (q.v.) of a fat (q.v.) or oil (q.v.) by an alkali (q.v.), leading to the formation of a salt (q.v.) of the fatty acid radicals (q.v.) in the form of soap, and the liberation of the trihydric alcohol, glycerol (q.v.).
