Shelf Life. The period subsequent to baking during which any bakery product retains its attributes of freshness to a sufficient degree to remain salable and edible. The time may be quite brief for breads (q.v.) made of lean doughs (q.v.), and quite long for low-moisture products, such as some cookies (q.v.), crackers (q.v.), rusk (q.v.), etc.
