Short Paste

Short Paste. A paste (q.v.) made of flour (q.v.), shortening (q.v.), sugar (q.v.) and water (q.v.) in various proportions for bakery products requiring shortness (q.v.) in their crumb (q.v.) structure. Shortness in a product is obtained not only by the appropriate ratios of shortening to flour, but also by the correct processing of the paste.
