Silicone Pan Coating

Silicone Pan Coating. A high-molecular-weight polymer (q.v.), known as silicone (q.v.), composed of silicon, a nonmetallic element, and hydrocarbons. When used to coat the interiors of baking pans (q.v.), it creates a smooth, impervious and nonadhesive surface that greatly facilitates product release (q.v.) during depanning (q.v.).
