Soda Cracker. A thin and crispy, wafer-type biscuit (q.v.), either square, oval or circular in shape, made from a lean dough (q.v.) that has undergone extensive fermentation (q.v.). Following lamination (q.v.) into seven or more layers, it is sheeted (q.v.) to the final thickness, cut, docked (q.v.) and stamped and sprinkled with salt (q.v.) before baking in a band oven (q.v.).
