Sodium Aluminum Sulfate

Sodium Aluminum Sulfate. Also referred to as SAS (Al2(SO4)3.Na2SO4), a very slow acting leavening acid (q.v.) that must be combined with a faster-acting acid leavener (q.v.) to produce a double-acting baking powder (q.v.). It finds primary applications for aerating (q.v.) chocolate cakes (q.v.) and English muffins (q.v.).
