Sodium Benzoate

Sodium Benzoate. A crystalline, water-soluble compound, NaC7H5O2, that is active as an antimicrobial agent (q.v.) only at pH levels (q.v.) below 4.5, and thus is effective only with such acidic ingredients as fruit fillings, jellies and jams which may undergo yeast fermentation under certain conditions.
