Sodium Diacetate. A mold and rope inhibitor (q.v.) in the form of a white crystalline powder, with the chemical formula of NaC2H3O2HC2H3O2.1/2H2O. It converts into acetic acid (q.v.) that exerts a strongly inhibiting effect on the growth of mold (q.v.) and rope (q.v.) organisms. Its use level in standardized white bread (q.v.) products is limited to 0.4% based on flour (q.v.).
