Sodium Propionate (CH3CH3COONa)
Sodium Propionate (CH3CH3COONa). A salt of propionic acid (q.v.), it is an effective mold inhibitor (q.v.) which, when used at maximum permissible levels (0.32% based on flour in standardized white bread (q.v.) and 0.38% in whole wheat bread (q.v.) will inhibit mold (q.v.) and rope (q.v.) development for several days beyond the regular mold-free shelf life (q.v.) of the untreated products. Recommended over calcium propionate (q.v.) for use in chemically-leavened (q.v.) products.
