Solid Fat Index (SFI)
Solid Fat Index (SFI). The ratio of solid fat crystals (q.v.) to the liquid oil (q.v.) in a fat (q.v.) at various temperatures (q.v.) that establishes the plastic character (q.v.) of the shortening (q.v.) product. SFI is an important attribute of any given fat and governs to a large measure its physical and functional properties.
