Sourdough French Bread

Sourdough French Bread. A type of white crusty hearth bread (q.v.) with a distinctive aromatic and acidic flavor. It is produced either from a straight dough (q.v.) which has undergone a prolonged spontaneous fermentation (q.v.), or by the sponge-and-dough process (q.v.) in which the sponge (q.v.) portion has been subjected to such a fermentation.
