Soybean Oil

Soybean Oil. The edible oil (q.v.) extracted from soybean (q.v.). It consists of some 15% saturated fatty acids (q.v.) and 85% mono- and polyunsaturated fatty acids (q.v.). Upon refinement, it represents the primary constituent of both hydrogenated (q.v.) and fluid shortenings (q.v.) used by bakers.
