Soybean Protein Isolate
Soybean Protein Isolate. Protein (q.v.) that is isolated from soybeans (q.v.) by various methods and often modified chemically or enzymatically (q.v.) to impart to it certain desirable functional properties. Available as a white, odorless and bland powder, it consists of 93% protein and is nearly fat-free. It is used principally for protein enrichment (q.v.) in bread (q.v.) products and as an aerating agent in products in which aeration (q.v.) plays a significant role.
