Soybean

Soybean. A leguminous plant, Glycine max, that is cultivated over wide areas of Asia, Europe and the Americas and whose seed (q.v.) is used for food, as a livestock feed, as a source of edible and industrial oils (q.v.), and for other commercial purposes. The soybean seed contains 18% fat (q.v.) and 40% protein (q.v.).
