Specificity. The limitation of enzyme activity (q.v.) to only one particular substrate (q.v.) or one particular type of reaction. Enzyme specificity may be absolute, i.e., very narrowly restricted to a single substrate, or relative, i.e., extending over a category of reactions, e.g., oxidation (q.v.), hydrolysis (q.v.), synthesis (q.v.), etc.
